How much do people know about Taiwanese Beef Noodles?
As a Taiwanese, I always wonder how people know about this knowledge object. Therefore, let's seeing from different perspectives!
I. Survey
Data collection
In order to know how people know about Taiwanese Beef Noodles. I conducted a survey both at University at Albany, State University of New York (UAlbany) and at a Chinese restaurant, Taiwan Noodle. (218 Central Ave., Albany, NY 12206, USA.)
Population and sample
The reason of choosing two places is because I thought that it would be great to know from real samples at a proper place, the customers of a local restaurant. However, the response rate is low. Then I decided to collect the data on campus of UAlbany. The final sample was comprised of 23 respondents, for a response rate of 38.33%.

The result indicates that people show positive attitudes toward Taiwanese Beef Noodles. However, it seems like here in the UAlbany area, people do not have much opportunity to eat it. Also, with the fact that it is not so available, people know little about it including its history, spirit, and different flavors.
II. Interview
This is an interview of Taiwanese Beef Noodles with the restaurant owner of Taiwan Noodle. (218 Central Ave., Albany, NY12206, U.S.A..)
Q1: What are customers' feedbacks about Taiwanese Beef Noodles?
Taiwanese Beef Noodles is an exotic food which is originated from the North part of China. With the long time lasting and evolution of the flavor, this delicacy can exist and accept by the public. Since we started our business, the feedback of Taiwanese Beef Noodles is positive.
Q2: What are the key factors of making a bowl of delicious Taiwanese Beef Noodles?
Noodle is a simple traditional element in Chinese culture. However, it is the food that difficult to master. For example, how to overcome the difficulty of making it here, where the temperature and humidity are different from Asia. Also, believe it or not, the chef's mood is also the key factor. If you dedicate your time, energy, and feelings (that shows your concern and deliberation) in it, the taste will be different. Generally, there are 3 concerning points, soup, noodles, and timing. The soup is the soul of Taiwanese Beef Noodles; cooking noodles requires experience to control the precise timing; the timing of combing soup and noodles and the timing of delivery to customers are important. If the timing is concise, the noodles tastes fresh and tasty. Besides, how to cook the meat (beef, tendon, and tripe) regarding the control of flame is chef's expertise.
Q3: Did /Do you adjust the flavor to meet customers' needs? What are they? Do you think it is localized? How do you think about this idea?
I believe other restaurants do so to meet customers' need and sometimes they even change the core elements of it. However, my original idea is that we want to introduce the most traditional Taiwanese Beef Noodles to the public. Thus, we keep the tradition. We are confident that even here in the United States, people can accept it since Taiwanese Beef Noodles is a popular dish in Asia.
Q4: What is the most special point of your Taiwanese Beef Noodles compared with other stores?
First of all, we refuse to add monosodium glutamate (MSG), the artificial seasoning that is unhealthy to our body. Second, we insist on doing "what we need to do". This idea is focused on traditional Taiwanese food. We chose to care our spirit and original thoughts.
Q5: What is the most attractive (positive) point of your Taiwanese Beef Noodles?
We emphasize on introducing the local, traditional Taiwanese Beef Noodles. No matter where the customers come from, they are looking for the best food. Thus, as long as we care about our principal of making best food and doing "what we need to do", it is the most attractive point of our Taiwanese Beef Noodles. Especially here around Albany, NY, there is no much traditional food. Thus, I hope we can introduce more to the public. Additionally, our price is reasonable. I found out that western people only have the rough ideas of "Chinese food", so I believe that we can do more by doing it in our own way. There are 9 series of Chinese food. For here, we focus on Taiwanese food in the south.
